From Cherry to Cup: The Journey Behind Your Daily Good Time

Before it's the warm, focus-sharpening ritual that kicks off your morning, your coffee lived a much wilder life. It started as a bright red cherry growing on a tree, thousands of miles from your kitchen counter. Getting from that cherry to the smooth, mushroom-infused cup in your hands is a journey of picking, drying, roasting, and grinding — and every step along the way shapes the flavor, aroma, and quality of what ends up in your mug. If you're upgrading your routine to a coffee that actually works as hard as you do, it helps to know what goes into making it.

It Starts With a Cherry, Not a Bean

The “bean” in coffee bean is a bit of a misnomer — it's actually the seed found inside a coffee cherry. These cherries grow on coffee trees in tropical regions around the world (our Arabica beans are sourced from Mexico), and they're hand-picked when they turn a deep red, signaling ripeness.

Once picked, the cherries have to be processed to get the seed out. Depending on the farm and the method, this might mean washing the fruit away or letting the cherries dry in the sun with the fruit still intact, which can add subtle flavor notes to the final cup. Either way, what's left after processing and hulling is a green coffee bean — dense, moisture-rich, and not at all resembling the roasted coffee you know. At this stage, the bean doesn't smell or taste like coffee at all. That transformation is entirely thanks to roasting.

Roasting: Where the Magic Actually Happens

Roasting is a carefully controlled process where heat transforms green beans into the rich, aromatic coffee we all love. Every stage plays a role in shaping the final flavor, and small adjustments in time and temperature can lead to dramatically different results — which is exactly why roasting is as much an art as it is a science.

Drying (200–300°F): Green beans arrive with 10–12% moisture still locked inside. The first job of roasting is driving that moisture out so the beans are ready for the chemical reactions to come. Beans shift from green to pale yellow and release a grassy, hay-like aroma. Get this phase wrong — too slow or too fast — and the beans can bake instead of roast, leading to flat, dull flavor.

Browning (300–385°F): This is where real flavor development begins. The Maillard reaction — the same chemical process that browns toast and sears steak — kicks in, turning the beans light brown and filling the air with a sweet, nutty aroma. Rush this stage and sweetness and acidity never fully develop; drag it out too long and the coffee can taste overly baked.

First Crack (385–400°F): Here's where beans let out an audible crack as trapped gases expand and escape. This is the decision point that defines a roast: pulling beans now results in a light roast — bright, acidic, and full of the coffee's origin character. It's also the moment behind our Light Earth Coffee's signature cherry and cocoa notes.

Push further into the medium range, and you get the mellower, rounder profile behind our Earth Coffee — smooth notes of brown sugar, cashew, and chocolate that make it an easy, everyday cup.

Second Crack (435–450°F): Keep going, and the beans crack a second time as their cell structure breaks down further and natural oils rise to the surface. This is dark roast territory — bold, smoky, and rich with notes of dark chocolate, like the deep, robust character in our Dark Earth Coffee.

Cooling and Degassing: Once a roast hits its target, the beans are rapidly cooled to lock in that flavor profile. But the process isn't quite finished — beans continue releasing carbon dioxide for 24 to 72 hours after roasting. That's why fresh-roasted coffee needs a short rest before brewing; too much trapped CO₂ can interfere with proper extraction and throw off your cup.
